The deep red colour of hibiscus comes from naturally occurring anthocyanins, a group of antioxidant plant pigments also found in richly coloured fruits and berries. Hibiscus also contains a variety of naturally occurring polyphenols and organic acids that contribute to its characteristic colour and distinctly tart flavour.
A Brilliantly Tart Herbal Tea
Hibiscus has a bright, tangy flavour often compared to cranberry, with a refreshing natural acidity and a clean finish. Its bold character makes it excellent on its own and particularly well suited to iced tea.
It also blends beautifully with rosehips, elderberries, rose petals, ginger, citrus peel and warming spices. A little honey or other sweetener can be added to balance its natural tartness if desired.
Flower or Calyx?
Although commonly sold and enjoyed as Hibiscus Flowers, the familiar deep-red portion of Hibiscus sabdariffa used for tea is primarily the fleshy calyx that develops around the flower. Once dried, these richly coloured pieces produce the characteristic ruby-red infusion associated with hibiscus tea around the world.
A Botanical with a Global Tradition
Hibiscus sabdariffa has a long history as both a beverage and traditional botanical across Africa, the Middle East, Asia and other tropical regions. In Egypt and surrounding regions, hibiscus is famously prepared as a deeply coloured beverage enjoyed both hot and cold.
Hibiscus also has a place in traditional Ayurvedic herbal practice, although different parts and preparations of hibiscus may be used according to the tradition.

Hot Infusion: Use 1–2 teaspoons of Organic Hibiscus Flowers per cup (250 ml) of boiling water. Steep for 5–10 minutes, then strain. Adjust the amount or steeping time for a deeper colour and more intense tartness.
Iced Tea: Prepare a stronger infusion using approximately twice the usual amount of hibiscus. Allow to cool and serve over ice. Sweeten to taste if desired.
