Lucuma is considered “The Gold of the Incas,” and is highly regarded by the indigenous people of Peru for its healing and nutritive properties. Lucumu powder is relatively new to the northern hemisphere, but is finding popularity among raw dessert chefs. Lucuma powder, made from the lucuma fruit that has been dried and milled, is a natural sweetener, full-bodied and sweet, with a maple flavor background and a rich and creamy texture, yet the fruit is naturally low in sugar content. Lucuma can be easily incorporated into beverages, batters, and baked goods. It can also be used to  top cereal, oatmeal and yogurts. Lucuma is extremely high in beta-carotene, iron, and niacin (B3).
