The carob tree, or Ceratonia siliqua, has fruit that looks like a dark brown pea pod, which carries pulp and seeds.
Carob pods have several phytochemicals such as polyphenols, fiber, proteins, fatty acids, carbohydrates, and amino acids. It has twice the amount of calcium compared to cocoa, it is free of a migraine-triggering compound and has high levels of vitamins such as vitamins A and B2 which are good for skin and eye health.
